CARROT CAKE SUPREME 
2 c. sugar
4 eggs
1 c. cooking oil
1 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. cinnamon
2 1/4 c. flour
1 c. nuts
1 (8 oz.) can crushed pineapple, drained

Cream eggs, sugar and oil. Add dry ingredients; mix well. Add nuts, drained pineapple and grated carrots. Blend well. Pour batter into 2 greased and floured 9-inch round cake pans. Bake at 350 degrees for about 35 minutes.

ICING:

1 lb. powdered sugar
1 (8 oz.) pkg. cream cheese
1 stick butter
2 tsp. vanilla

Blend well powdered sugar, cream cheese, butter which has been softened, and vanilla. Spread on cooled cake. This will seem like a large amount of frosting but use all of it.
