CARROT CAKE | |
1 3/4 c. sugar 1 1/4 c. cooking oil 4 eggs 2 c. plain flour 1 1/2 tsp. cinnamon 2 tsp. baking soda 2 tsp. baking powder 1 tsp. salt 3 c. grated carrots (do not pack) 1 c. chopped nuts (pecans) Cream the first three ingredients using electric mixer add dry ingredients and then fold in the grated carrots and chopped nuts. Bake in 3 (9") pans at 325 degrees for 40 to 50 minutes. (Grease and flour pans.) ICING: 1/2 stick butter 1 box powdered sugar 8 oz. cream cheese 2 tsp. vanilla 1 (#2) can crushed pineapple |
