VERA'S CARROT CAKE 
2 c. white sugar
1 c. cooking oil
3 eggs
2 c. flour
1 tsp. each baking soda, salt, cinnamon
1 sm. can crushed pineapple
2 c. grated raw carrots
1 pkg. Angel Flake coconut
2 c. chopped nuts
1 c. seedless raisins

Mix well in order given. Bake in ungreased 9x13 pan at 350 degrees for 55 minutes.

GLAZE:

1 c. white sugar
1 c. buttermilk
1 cube butter
1 tsp. white corn syrup
1 tsp. vanilla
1/2 tsp. baking soda

Not the recipe used on the Bobby Flay throwdown. Frosting or glaze was based on creme cheese.
