BAKED FISH SCANDINAVIAN 
1 lb. pkg. frozen fish fillets
1/4 c. chopped onion
1/4 c. chopped celery
1/4 c. chopped green pepper (optional)
2 tbsp. butter
1 sm. tomato, chopped
1 tbsp. snipped parsley
1 tbsp. lemon juice

Allow fish to stand unwrapped at room temperature for 20 minutes. Bias-slice fish in 1-inch slices. Meanwhile, saute onion, celery, green pepper in butter until just tender. Stir in tomato and seasonings.

Arrange fish slices in 12x7 1/2 baking dish. Sprinkle with salt and pepper. Spoon vegetable mixture over fish and bake uncovered in 450 degree oven for 18-20 minutes or until fish flakes easily when tested with a fork.
