SWEET POTATO MUFFINS 
1 1/4 c. sugar
1 1/4 c. mashed sweet potatoes
1/2 c. butter, softened
2 lg. eggs
1 1/2 c. flour
2 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. salt
1 c. milk
1/2 c. chopped raisins
1/4 c. walnuts, pecans
2 tbsp. sugar mixed with 1/4 tsp. cinnamon

Grease 24 muffin tins. Preheat oven to 400 degrees. Beat sugar, sweet potatoes and butter until smooth. Add eggs and blend well. Sift together flour, baking powder, spices and salt; add alternately with milk to sweet potato mixture, stirring to blend. Do not over mix. Fold in raisins and nuts. Spoon into muffin tins. Sprinkle with sugar and cinnamon. Bake 25-30 minutes. Serve warm.
