SWEET POTATO SALAD 
1-1 1/2 lb. sweet potatoes, do not peel
Boiling water
1 c. thinly diced celery
1/2 c. thinly diced green onion
1 lg. red apple, diced
1/2 c. mayonnaise
1 tsp. prepared mustard
1/2 tsp. grated orange peel
1 tbsp. orange juice
2 tbsp. finely chopped ginger
Salt & pepper
Crisp greens

Cook sweet potatoes in boiling water until tender. Drain, when cool enough to handle; peel, cut into 1/2 inch cubes. Combine sweet potatoes, celery, green onion and apple. Mix rest of ingredients together to make a dressing. Pour over sweet potato mixture and chill for 2 hours or overnight.
