IMPOSSIBLE TACO PIE 
1 lb. ground beef
1/2 c. onion, chopped
1 env. taco seasoning
1 (4 oz.) can green chilies, chopped & drained
1 1/4 c. milk
3/4 c. baking mix
3 eggs
2 tomatoes, sliced
1 c. shredded Monterey Jack or cheddar cheese

Preheat oven to 400 degrees. Grease 10 inch quiche dish or pie plate, 10 x 1 1/2 inches. Cook and stir ground beef and onion over medium heat until beef is brown, drain. Stir in seasoning mix. Spread in plate, sprinkle with chilies. Beat milk, baking mix and eggs until smooth. Pour into plate. Bake 25 minutes.

Top with tomatoes, sprinkle with cheese. Bake until knife inserted between center and edge comes out clean, 8 to 10 minutes longer. Cool 5 minutes. Serve with sour cream, chopped tomatoes and shredded lettuce, if desired.
