MEXICAN CORN BREAD 
1 1/2 c. self-rising corn meal
1 c. buttermilk
1 c. creamed corn
3 eggs
1/2 c. oil
2 tsp. chilies, peppers or jalapeno relish
1 c. grated sharp cheddar cheese

Pour half of batter in pan. Add a layer of cheese, then add remaining batter. Bake at 400 degrees until done.
