BOURBON SWEET POTATOES | |
6 med. size sweet potatoes (about 4 lbs.) 1/2 c. butter, melted 1/2 c. firmly packed brown sugar 1/3 c. orange juice 1/4 c. bourbon 1/2 tsp. salt 1/2 tsp. pumpkin pie spice 1/2 c. chopped pecans Cook sweet potatoes in boiling water for 20 to 25 minutes or until tender. Drain and let cool to touch. Peel potatoes, and mash pulp. Combine potatoes, butter, brown sugar, juice, bourbon, salt and pie spice, mixing well. Spoon mixture into a lightly greased 1 1/2 quart baking dish. Sprinkle chopped pecans around edge of dish. Bake at 375 degrees for 45 minutes. Yield: 8 to 11 servings. |
