BOURBON SWEET POTATOES 
6 med. size sweet potatoes (about 4 lbs.)
1/2 c. butter, melted
1/2 c. firmly packed brown sugar
1/3 c. orange juice
1/4 c. bourbon
1/2 tsp. salt
1/2 tsp. pumpkin pie spice
1/2 c. chopped pecans

Cook sweet potatoes in boiling water for 20 to 25 minutes or until tender. Drain and let cool to touch. Peel potatoes, and mash pulp. Combine potatoes, butter, brown sugar, juice, bourbon, salt and pie spice, mixing well. Spoon mixture into a lightly greased 1 1/2 quart baking dish. Sprinkle chopped pecans around edge of dish. Bake at 375 degrees for 45 minutes. Yield: 8 to 11 servings.

Have prepared this recipe for years. It is wonderful. I make it up several days ahead and leave in a glass bowl. The flavor improves. Your guests and family rarely know the liquor is in the mix.

I made this last Thanksgiving for my family...I added a layer of sliced sweet apples on top and topped it all with a crumble, made from brown sugar, flour, oatmeal and butter...bake until top is lightly browned...This is awesome and my family wants it again this year. I couldn't wait. I made it tonight, it is snowing in the Berkshires...Hope you all enjoy this version...
