BOURBON SWEET POTATOES 
6 med. sweet potatoes
1/2 c. firmly packed brown sugar
1/2 c. butter
1/3 c. orange juice
1/4 c. bourbon
1/2 tsp. salt
1/2 tsp. pumpkin pie spice
1/2 c. chopped pecans

Boil sweet potatoes for 20-25 minutes or until tender. Drain and let cool. Peel potatoes and mash pulp.

Combine potatoes, butter, brown sugar, juice, bourbon, salt and pie spice. Mix well. Spoon mixture into lightly greased 1 1/2 quart baking dish. Sprinkle chopped pecans around edge of dish. Bake at 375 degrees for 45 minutes. Yield: 10 servings.
