SAUTEED VEGETABLES 
1 c. sliced carrots
1 c. broccoli flowerets
1 c. cauliflower flowerets
3 green onions, sliced
2 tbsp. olive oil
1 yellow squash, sliced 1/4 inch
1 zucchini, sliced
1/2 green pepper, cut in strips
1/2 red pepper, cut in strips
1 tsp. lite soy sauce

Heat heavy skillet over high heat. Add oil and vegetables. Stir constantly for 1 to 2 minutes. Add 2 tablespoons water and lower heat to medium. Stir and cover for 4 minutes. Add soy sauce, stir and serve. 4 servings.
