APPLESAUCE FRUIT CAKE | |
1 1/2 c. unsweetened applesauce 1/2 c. Crisco 1 c. sugar 1 (8 oz.) pkg. dates 1 (8 oz.) can walnuts 1 (4 oz.) jar red glace cherries 2 c. seedless raisins 2 1/4 c. flour 2 tsp. baking soda 1/2 tsp. salt 1 tsp. cinnamon 1/2 tsp. nutmeg 1/2 tsp. allspice Grease pans, line with foil, then grease again. Combine applesauce, Crisco and sugar in pan. Boil 5 minutes. Cool. Mix fruits and nuts in bowl. Sift dry ingredients. Add to fruit mixture. Stir in cooled applesauce mixture. Pour into pans. Bake at 275 degrees 1 hour and 40 minutes for loaf pan or 2 hours for tube pan or until cake tests done. Cool in pan for 30 minutes. Remove from pan. When cold wrap and store in tight container. |
