CABBAGE RICE | |
3 c. chopped cabbage 3 tbsp. tomato paste 1/4 c. olive or other oil 1 1/2 tsp. salt 1 c. long-grain rice 2 c. water 2 tsp. chopped parsley 1/4 tsp. pepper Cook chopped cabbage and seasonings in oil over low heat for 20 minutes. Add water and tomato paste; bring to a boil. Add rice; reduce heat, cover, and simmer until rice is light and fluffy. |
