ORANGE YAM SAUTE | |
2 lg. garnet yams 3 tbsp. orange juice concentrate 2-3 tbsp. light honey Optional: Pinch of thyme, sm. handful currants 2-3 tbsp. butter 1/2 c. raw almonds Slice the yams about 1/8 - 1/4 inch thick. Halve or quarter the slices if they look too big to be bite sized. Melt butter in a skillet and, when hot, add the yams and saute for a few minutes. When the yams begin to soften, add the orange juice concentrate, a little water if you want the juice to be thinner, the almonds and any optional extras. Cover and steam until the yams are tender. If you decide to try the more savory version with a pinch of thyme, brown the solids in the butter before you saute the yams. |
