CUCUMBER RELISH 
4 qt. cucumbers (remove seeds)
1 pt. onions
1 sm. can pimiento
2-3 c. sugar (3 c. is preferred)
1 qt. vinegar (or enough to make wet)
1 tbsp. salt
1 tbsp. mustard seed

Grind cucumbers and onions in food chopper with coarse knife. Leave cucumbers and onions in salt overnight; drain. Add pimiento, sugar, vinegar, salt, and mustard seed. Mix together well. Then boil all together and seal. Is very good. (Original recipe was from Mrs. Albert Beckman, now deceased.)
