BROCCOLI CASSEROLE 
1 1/3 tbsp. butter
1/2 c. chopped onion
1 bunch broccoli, cooked and chopped
1 clove crushed garlic
2 c. cooked brown rice
1/2 c. grated Parmesan cheese
4 eggs, slightly beaten
1/2 c. milk
Dash pepper
Grating of nutmeg
1/2 c. shredded Mozzarella cheese

In a large skillet, heat butter. Add onion and saute until golden. Add broccoli, garlic, rice and Parmesan cheese. In a bowl, combine eggs, milk and seasonings. Add this to broccoli mixture. Turn into a buttered 2 quart casserole. Top with Mozzarella. Bake at 350 degrees for 20-25 minutes or until brown and bubbly.
