ZUCCHINI BREAD | |
1 c. walnuts, chopped 4 eggs 2 c. sugar 1 c. vegetable oil 3 1/2 c. flour 1 1/2 tsp. salt 1 1/2 tsp. baking soda 1 tsp. cinnamon 3/4 tsp. baking powder 1 tsp. vanilla 2 c. zucchini, blended or grated 1 c. raisins Beat eggs gradually. Add sugar, then oil. Combine dry ingredients, add to first mixture. Alternate with zucchini. Stir in raisins, walnuts and vanilla. Turn into 2 loaf pans (greased). Bake at 350 degrees for 55 minutes. Let sit in pan for 10 minutes. Take out, cool on rack. |
