ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. oil
2 c. grated, peeled zucchini
1/4 tsp. baking powder
3 tsp. vanilla
3 c. flour
1 tsp. salt
3 tsp. baking soda
3 tsp. cinnamon
1 c. nuts (optional)

Beat eggs until light and foamy. Add oil, sugar, zucchini and vanilla. Mix well but lightly. Add flour, salt, soda, cinnamon and baking powder. Mix until blended. Add nuts. Bake at 350 for 1 hour in 2 large or 3 small loaf pans (greased).
