OLD FASHIONED PEANUT BRITTLE | |
1 c. sugar 1/2 c. light corn syrup 1/4 c. water 1 c. Planters cocktail peanuts 2 tbsp. butter 1 tsp. vanilla extract 1 tsp. baking soda Cook and stir sugar, corn syrup and water in heavy bottomed 2-quart saucepan over high heat until sugar dissolves. Cook, without stirring, until mixture reaches 300°F (hard-crack stage), about 5 minutes. Stir in peanuts, butter, vanilla and baking soda. Quickly spread in thin layer on greased baking sheet; cool. Break into pieces; store in airtight container for up to 2 weeks. Makes 1 pound. |
