ORANGE PEANUT BRITTLE | |
1 c. sugar 1 c. raw peanuts 1 c. light corn syrup 2 tbsp. flaked coconut 1 tbsp. grated orange rind 1 tsp. baking soda Combine sugar, peanuts, and corn syrup in a heavy Dutch oven; cook over medium heat, stirring constantly, until mixture reaches soft crack stage (about 290 degrees). Remove from heat. Stir in coconut and orange rind. Add soda and stir well. Spread mixture thinly onto 2 warm, buttered 15 x 10 x 1 inch jelly roll pans (work quickly). Let cool and break into pieces. Yield: About 1 pound. |
