APPLE CRISP 
5 lg. Pippin apples
Juice of 1/2 lemon
1 tbsp. cinnamon
2 tbsp. whole wheat pastry flour
3/4 c. dark raisins

TOPPING:

1 1/2 c. rolled oats or cereal flakes
3/4 c. whole wheat pastry flour
3/4 c. honey or apple juice concentrate
1 tbsp. cinnamon

Core and slice apples in thin pieces. Place in a 9 x 13 inch baking dish. Sprinkle with lemon juice, cinnamon, and flour. Mix well, making sure the apples are evenly coated. Sprinkle raisins over apples. In a separate bowl, combine oats, 3/4 cup flour, and cinnamon. Mix in honey. Drop topping evenly over the apple mixture. Cover with foil and bake at 350 degrees for 25 minutes. Uncover and bake 15 minutes more or until browned.

In glass baking dish, sprayed with non-stick, spread fruit evenly. Then sprinkle and continue layering all ingredients in order. Blend apple juice and vanilla together and pour evenly over all. Bake at 350 degrees for 20 minutes.
