HAPPY DAY CAKE 
2 1/2 c. sifted cake flour
1 1/2 c. sugar
3 tsp. baking powder
1 tsp. salt
1/2 c. shortening, room temperature
1 c. milk
2 eggs, unbeaten
1 tsp. vanilla

1. Measure sifted flour into bowl, add sugar, baking powder, and salt.

2. Place shortening in mixing bowl and stir just to soften. Sift in dry ingredients. Add 3/4 cup milk. Beat 3 minutes in mixer or 300 strokes by hand.

3. Add eggs, vanilla and rest of milk. Beat 1 minute or 150 strokes.
