PEANUT BRITTLE (MICROWAVE) 
1 c. sugar
1/2 c. light corn syrup
1 c. roasted peanuts
1 tsp. butter
1 tsp. vanilla extract
3/4 tsp. baking soda

Butter cookie sheet. In a glass bowl or glass measuring cup, combine sugar and syrup. Cook on high 6 to 8 minutes, until brown. Stir in peanuts, butter and vanilla. Return to microwave 1 minute on high. Place on a hot pad. Add baking soda and stir until foamy. Pour on cookie sheet. Cool for 30 to 60 minutes. Break into pieces. Store in an air tight container. Makes 1 pound. This mixture becomes very hot. Have hot pads ready.

Since microwave ovens vary in power, you may need to adjust your cooking time.
