YEAST ROLL DOUGH 
2 c. milk
1/2 c. sugar
1/2 c. shortening
1/8 c. warm water
1/2 pkg. yeast
4 c. flour (plain)

Scald together milk, sugar, and shortening. Cool to lukewarm. Dissolve yeast in water. Add all to flour. Beat by hand together until thoroughly combined. Cover and let rise to double in bulk.

Add in after rising: 1 tsp. baking soda 1 tsp. baking powder 1/2-1 c. flour

Beat together by hand and refrigerate up to 10 days. When ready to use, shape with buttered hands and let rise 15 minutes. Bake at 375 degrees for 15 to 20 minutes.

1. Cloverleaf: 3 small balls to muffin tin cup.

2. Pan: Large balls to cake pan.

3. Cinnamon Rolls: Roll in rectangle, brush with melted butter. Sprinkle with brown sugar and cinnamon (nuts, raisins optional). Roll up jelly roll fashion, slice and bake. Glaze.
