ANGEL FOOD CAKE DELUXE 
1 c. cake flour
1 1/2 c. powdered sugar
1 1/2 c. egg whites (about 12)
1 1/2 tsp. cream of tartar
1 c. white sugar
1/4 tsp. salt
1 1/2 tsp. vanilla or almond extract

Mix flour and powdered sugar together in a small bowl. Set aside. Beat egg whites and cream of tartar until foamy. Beat in sugar, 2 tablespoons at a time. Continue beating until stiff and glossy. Add salt and flavoring; do not underbeat. Sprinkle flour/sugar mixture in, 1/4 cup at a time, folding in just until mixture disappears. Bake at 350 degrees for 35 minutes.
