ONE EGG BANANA BREAD 
3 lg. ripe or overripe bananas
1 c. sugar
1 egg
1 1/2 c. all purpose flour
1/4 c. melted butter
1 tsp. baking soda
1 tsp. salt
1/2 c. chopped walnuts (opt.)

Mash bananas with a fork in a bowl; stir in remaining ingredients until combined. Pour batter into a greased 9"x5"x3" loaf pan. Bake at 325 degrees for 50 to 60 minutes or until bread tests done. Makes 1 loaf.
