BREASTS OF CHICKEN SAN THOMIAN 
4 chicken breasts
Cooking oil
1 lemon
1 can mandarin sections
1 can pineapple chunks
Garlic powder
Soy sauce
Orange marmalade
Brown sugar
Cornstarch
2 tomatoes, cut up
2 green peppers, cut up
Salt and pepper
Ginger

Pressure cook 4 chicken breasts 9 minutes. Then brown on both sides in cooking oil. Rub with lemon or lime juice. Sprinkle lightly with garlic powder, salt and pepper.

Drain liquid from can of mandarin orange sections and from can of pineapple chunks. Place chicken in shallow baking dish and pour fruit over it.

Make sauce of 2 cups of pineapple juice plus liquid from mandarins and pineapple chunks. Add 1 tablespoon soy sauce, 1 tablespoon orange marmalade, 1 teaspoon powdered ginger, 2 tablespoons lemon juice, 2 tablespoons brown sugar, 2 tablespoons cornstarch dissolved in water. Boil juices and other ingredients and cook until clear and slightly thickened. Pour over chicken. Bake 400 degrees about 15 minutes. Arrange cut up tomatoes and peppers around edges. Bake 5 minutes.
