AUNT LURA MAE'S FRESH APPLE CAKE 
3/4 c. Mazola oil
2 eggs
1 1/2 c. flour
3/4 tsp. salt
1 c. sugar
2 c. grated Granny Smith apples
1 tsp. baking soda
1 c. chopped pecans
1 tsp. vanilla

Grease and flour 2 x 13 x 10 inch pan. Preheat oven to 350 degrees. Cream oil, sugar and eggs 2-3 minutes. Add sifted dry ingredients; mix well. Fold in apples and pecans. Add vanilla. Bake 30 minutes.

FROSTING:

1/2 c. butter, melted
3 tbsp. milk
2 c. sifted powdered sugar
1/2 c. chopped pecans
1 1/2 tsp. vanilla

Add milk to melted butter. Add powdered sugar, vanilla and pecans. Spread on cooled cake.
