POTATO AND GARLIC SOUP 
1 lb. potatoes
2 med. onions
2 tsp. butter
3 1/2 c. stock or broth
2 cloves crushed garlic
Salt
Freshly ground black pepper
Bouquet Garni (herbs)
2/3 c. plain yogurt
2 tbsp. chopped parsley

Peel and slice potatoes. Finely chop onion. Melt butter in saucepan over low heat. Stir in potatoes and onion. Cover and let "sweat" 8 minutes. Pour stock or broth in and bring to boil. Add garlic, herbs and pepper. Cover; simmer 20 minutes.

Puree soup in blender until smooth. Stir in yogurt and heat, if necessary without boiling. Serve with chopped parsley on top.
