ZUCCHINI NUT LOAF 
1 c. grated unpeeled zucchini
1 c. sugar
1 egg
1/2 c. cooking oil
1 1/2 c. flour
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. nutmeg
1/4 tsp. baking powder
1/4 tsp. grated lemon peel
1/2 c. chopped nuts

In mixing bowl, beat zucchini, sugar and egg. Add oil, mix well. Stir together flour and rest of dry ingredients. Stir into zucchini mixture. Fold in nuts. Pour into greased loaf pans. Bake at 325 degrees for 60 minutes or until done.
