JAMBALAYA 
1 tbsp. fat
1 tbsp. flour
1 lb. ham, cooked
1 c. shrimp
1 1/2 c. cooked tomatoes
1 onion, sliced
1/4 tsp. thyme
1 clove garlic, crushed
1 green pepper, chopped
1 tbsp. parsley flakes
Salt, pepper & paprika
1 tbsp. Worcestershire sauce
1 red pepper (whole not too hot, crushed very hot)
4 c. water
1 c. uncooked rice

Melt fat. Add flour and brown slightly. Add chopped ham, shrimp and tomatoes. Cook for 3 minutes, add onions, seasonings and water. Simmer for 10 minutes. Add rice and boil until tender (30 minutes). The mixture should not be stirred although it may be necessary to lift it from the bottom of the pan to avoid rice from burning. Serve with crackers.
