HOT POTATO SALAD | |
8 potatoes, well cooked 4 hard boiled eggs 3/4 c. sliced celery 3/4 c. chopped onion 2 tsp. salt 8 slices of crisp bacon 3 tbsp. bacon drippings 1 tsp. mustard 1/4 tsp. celery seed 3 tbsp. sugar 2 tbsp. flour 1/2 c. vinegar 1/4 c. water 2 tbsp. mayonnaise 1 tbsp. chopped parsley (optsp.) Cook potatoes and eggs. Slice and place in layers in casserole dish. Cook bacon. Mix salt, bacon drippings, mustard, sugar, flour, vinegar, water and celery seed. Boil until clear. Add celery and onion and let stand a few minutes. Lastly add the mayonnaise and parsley; mix. Pour over potatoes. Top with bacon pieces. (Note) Make a layer of potatoes, a layer of egg and a layer of dressing. You end up with 3 layers of potatoes and 2 of egg, with bacon on top. Serves 12. |
