CHICKEN RICE CASSEROLE 
3 c. cubed chicken
1 c. chopped celery
1 can sliced water chestnuts
2 tbsp. minced onion
1 can condensed mushroom soup
1/2 c. water
1/2 pkg. Lipton onion/mushroom soup mix
Cashew nuts
3 c. brown rice

Cook brown rice according to recipe on package. Make bed of rice in casserole, amount according to taste.

Combine the chicken, celery, water chestnuts and onion and place on top of rice.

Combine the mushroom soup, water and the onion/mushroom soup mix. Pour over casserole. Cook covered 350 degrees for 30 minutes. Last 15 minutes uncover and sprinkle with cashew nuts (and dried onion rings if desired).
