MORNING GLORY MUFFINS 
2 c. flour
2 tsp. cinnamon
2 tsp. baking soda
1/2 tsp. salt
1 1/4 c. sugar
1 1/2 c. shredded carrots
2 lg. tart apples, shredded and peeled
1/2 c. raisins
3/4 c. shredded coconut
1/2 c. chopped pecans or walnuts
3 eggs, lightly beaten
1 c. vegetable oil
1/2 tsp. vanilla
1 sm. can crushed pineapple, drained

Preheat oven to 375 degrees and grease muffin tins. Mix all ingredients together in mixer until smooth. Fill each muffin tin 3/4 full. Bake 18-20 minutes or until golden brown. Cool in tin for 5 minutes before removing.
