CHICKEN PARMESAN 
1/2 c. Progresso Italian bread crumbs
1/4 c. Parmesan cheese
4 boneless chicken breasts
1 egg, beaten
3 tbsp. butter
1 green pepper, thinly sliced
8 oz. can tomato sauce
1/2 c. water
1/4 tsp. oregano (opt.)
2 c. Mozzarella cheese

In a pie pan mix bread crumbs and Parmesan cheese. Dip breasts in egg and roll in dry mixture. Brown in large skillet for 3 minutes on each side. Mix tomato sauce, water and oregano and pour over chicken. Add green pepper. Cover and simmer for 30 minutes. Sprinkle Mozzarella cheese and melt. Serves 4.
