BETTE'S LINZER BARS 
2 1/2 c. unsifted flour, spooned into cup
1/2 c. granulated sugar
1 c. butter, room temperature (2 sticks)
2 egg yolks
12 oz. raspberry jam

B:
4 egg whites
1 c. confectioners' sugar
1 1/2 c. ground walnuts

Preheat oven to 350 degrees.

A. Mix flour and granulated sugar. Make a well and add butter and egg yolks. Blend with fingers into a dough (children love to help with this). Pat into a jelly roll pan (10 x 15 inches). Prick with a fork. Bake at 350 degrees for 15 to 20 minutes or until golden. Remove from oven; spread with jam.

B. Beat egg whites until frothy; gradually beat in confectioners' sugar until stiff. Fold in nuts and spread mixture over jam, covering the entire pan up to the edge so no jam shows. Replace in oven and bake at 350 degrees for 25 minutes or until golden. Cut into bars when cool.
