3 slices bacon, diced
4 potatoes, peeled, and diced
1 onion, peeled and diced
1 tbsp. chopped parsley
Salt and pepper to taste

Place bacon in frying pan and cook over medium heat for 4 minutes. Remove bacon and set aside. Add diced potatoes to hot bacon fat; season. Partially cover and cook 5-7 minutes over medium heat. Stir occasionally. Add onion and bacon to pan; cook uncovered about 4 minutes on medium-high. Sprinkle with parsley.
