SPICY PUMPKIN SOUP 
1 sm. onion, diced
4 stalks celery, diced
4 ripe plum tomatoes, seeded & diced
1 tbsp. butter
1 lb. can processed pumpkin
4 c. chicken stock
1 tbsp. paprika
1/4 tsp. cayenne pepper
Salt & pepper to taste

1. Saute onion, celery and tomatoes in butter, until onions are transparent.

2. Add spices and cook for 1 more minute.

3. Add pumpkin and whip in chicken stock.

4. Simmer for 30 minutes. Add salt and pepper; serve hot. Serves 4 easy.
