GERMAN PANCAKE | |
1 can apple pie filling, warmed 4 eggs 3/4 c. milk 3/4 c. flour, sifted 1/2 tsp. salt 1 tbsp. butter Beat eggs, milk, flour and salt in bowl. Melt butter in a 10 inch heavy skillet. Pour batter in and bake in 425 degree preheated oven about 15 minutes. (Puncture in center when pancake puffs up). Bake 10 minutes more in 350 degree oven until golden brown. Place pancake on hot platter and add 2 tablespoons each melted butter and powdered sugar. Spread half with the warm apple filling and fold over other half. Cut crosswise in serving pieces after drizzling over top 2 more tablespoons butter and sugar. (A bit of lemon juice and brown sugar, and small amount of cinnamon give zip to the apple pie filling). |
