RISOTTO (YELLOW RICE) 
2 tbsp. minced onion
1/4 lb. butter
1 c. rice
1 lg. pinch of saffron
2 c. chicken broth (can make it up with bouillon cubes)

In saucepan, saute 2 tablespoons minced onion in butter. Add rice, pinch of saffron and add broth. Stir, cover and simmer 20-30 minutes. Serve with pork chops, chicken or beef. Serves 4.
