APPLESAUCE BREAKFAST CAKE 
Delicious for breakfast, snacks, or dessert.

TOPPING:

1/4 cup packed brown sugar
1 tbsp. butter
1/2 tsp. cinnamon
1/4 cup chopped walnuts or pecans

Mix together brown sugar, butter and cinnamon from the topping ingredients until crumbly. Add nuts. Stir to mix. Set aside.

CAKE:

1 cup all-purpose flour
1/3 cup sugar
1/2 tsp. baking powder
1/4 tsp. baking soda
1/8 tsp. salt
1 egg, beaten
1/2 cup applesauce
1/4 cup vegetable oil
1/2 tsp. vanilla

Mix flour, sugar, baking powder, baking soda and salt. Add well beaten egg, applesauce, oil and vanilla, mix well. Pour batter into well greased 8x8x2-inch pan. Sprinkle topping over batter. Bake at 350°F for 20-25 minutes.

Great tasting, really light and fluffy cake. A big hit with my family! I didn't have any baking soda (the second time I made it) so used self-rising flour and left out the baking powder... and it turned out fine!

My family loves this. I make it in the mornings when I have family visiting or at night after big dinners like Thanksgiving or Sunday Dinner. Tastes great with a Ice cold glass of Almond Milk or a cup of Tea/Coffee. The Kids enjoy it with a scoop of Pecan or Vanilla Ice Cream.
