IRISH POTATO CASSEROLE 
2 lb. bag frozen hash browns
1/2 c. chopped onion
16 oz. sour cream
1 tsp. salt
1/4 tsp. pepper
1 can cream of chicken soup
1 stick melted butter
8 oz. sharp Cheddar cheese, grated
1/4 c. milk

Mix all ingredients together. Pour in 9x13x2 inch pan. Mix 1/2 stick of melted butter and 2 cups corn flakes. Sprinkle on top of mixture (optional). Bake at 325 degrees for 45 minutes.
