KHA-NOM-KAI-NOK-KA-THA 
3 c. steamed sweet or regular potatoes
1 1/2 c. sugar
1 tsp. salt
1/2 c. wheat flour
2 c. tapioca flour
1 chicken egg
3 c. oil

Mash potato by fork or mortar. Mix tapioca flour, wheat, flour, salt and sift. Add sifted flour to potato. Knead the mixture until doughy. Add egg and knead until mixed well. Let stand for 30 minutes. Form dough into oval shape. Saute it over medium heat using ladle. Soften it by using bottom of ladle, pressing it up and down in oil. Fry until brown and serve while it is still hot.

NOTE: If the dough becomes hard, add coconut milk or fresh milk.
