CHICKEN ALMOND SALAD 
1 env. unflavored gelatin
1/4 c. cold water
1 c. mayonnaise
1 c. heavy cream, whipped
1/2 tsp. salt
1 1/2 c. diced, cooked chicken
3/4 c. almond meats, blanched, toasted, and chopped
3/4 c. green seedless grapes, halved

Soften gelatin in cold water and dissolve over hot water. Cool slightly and combine with mayonnaise, whipped cream, and salt. Fold in remaining ingredients. Chill in mold until firm. Unmold on crisp lettuce. Serves 6 to 8.
