PINEAPPLE BARS 
1 c. crushed pineapple
1 c. granulated sugar
3 1/2 tbsp. cornstarch
1/4 tsp. salt
1/2 c. butter
1 c. light brown sugar
1 1/2 c. dry oatmeal
1 1/2 c. sifted all-purpose flour
1 tsp. baking powder
1/2 tsp. salt

Combine pineapple, sugar, salt and cornstarch in saucepan. Cook slowly, stirring constantly until mixture is thick.

Cream butter and brown sugar. Add oatmeal. Sift and mix remaining dry ingredients. Add to creamed mixture. Mix thoroughly. Reserve 1 cup of mixture. Spread remainder on bottom of greased pan. Cover with pineapple mixture. Sprinkle with remaining oatmeal mixture. Bake at 375 degrees for 25-30 minutes in 8 x 12 inch pan.
