CHILI CON CARNE 
1 lb. ground round or ground beef
1 lg. onion, minced
1 garlic clove, minced
3 tbsp. olive oil
1 c. tomato sauce
1 (6 oz.) can tomato paste
1/2 tsp. cumin seed
1/2 tsp. dried oregano
1/4 tsp. crushed red pepper
1 bay leaf
2 tbsp. chili powder (or to taste)
1 tbsp. dried basil
1 1/2 tsp. salt
2 c. cooked pinto beans

Saute the beef, onion and garlic slowly in the oil. Add the tomato sauce, tomato paste and seasonings. Continue simmering over low heat for about 10 minutes. Add the beans, cover, and simmer for 1 hour or longer. If additional liquid is needed, add beef stock so that the mixture has the consistency of soup.
