FLAN 
1/2 c. sugar
4 eggs
1 can sweetened condensed milk
1 can evaporated milk
1 tsp. vanilla extract

In a 9-inch cake pan, sprinkle the sugar evenly and place over medium heat. Caramelize the sugar, stirring occasionally until light golden brown. Allow to cool; the mixture may crack. Blend remaining ingredients for 15 seconds. Pour over caramelized sugar. Cover with aluminum foil. Bake in a larger shallow pan containing 1 inch of water at 350 degrees for 55 minutes. Remove and uncover; let cool for 30 minutes. Loosen edges with spatula. Place a serving plate upside down on top of pan and quickly invert Flan onto it. Keep refrigerated. Serves 6.
