SKILLET POTATOES 
1/4 c. butter, melted
1/2 c. chopped onions
1 (10 oz.) can cream of mushroom soup
1/2 can milk (soup can)
1 c. grated cheddar cheese
1 c. cheddar cheese cracker crumbs
6 boiled potatoes, sliced
2 tbsp. chopped pimento, optional
Black pepper

Melt butter in skillet atop the grill or stove top and saute chopped onions lightly. Add soup, milk, and cheese, stir until cheese is melted. Add cheese cracker crumbs, sliced potatoes and pepper mixing thoroughly. Continue cooking, stirring occasionally until the potatoes are heated through. Makes 6 servings.
