PEPPERS STUFFED WITH SAUERKRAUT 
6 large green peppers
1 c. cracker crumbs
2 tbsp. finely chopped onion
1/4 tsp. chili powder
2 c. sauerkraut
1 tbsp. lemon juice
2 tsp. salt
Pinch of pepper
1/2 c. canned tomatoes
Grated cheese

Cut thin slices from stem end of peppers, remove seeds and parboil in boiling salted water to cover 5 minutes. Mix remaining ingredients except cheese. Stuff peppers and top with grated cheese. Bake at 375 degrees for 25 to 30 minutes. (1/2 pound ground beef may be added if desired, brown meat and onion in frying pan, and add to above). Serves 6.
