CHICKEN PIE 
4-5 lb. hen
Salt to taste
Flour
1 egg

Cover hen with water, add salt and boil gently until meat is tender. Remove hen and thicken the broth with flour. Beat egg, add a little warm broth, then add to gravy. Remove bones from meat.

BISCUIT OR PIE DOUGH:

Roll biscuit dough to 1/4 inch thick. Pie dough a little thinner. Line a large baking dish with crust.

New potatoes
Peas
Diced carrot
Chopped onions
Salt and pepper

Put in layer of meat, then a layer of vegetables, another layer of meat and so on to fill baking dish. Season each layer lightly with salt and pepper. Fill with gravy and put top crust in place, leaving a large hole in top crust for steam to escape. Bake at 450 degrees for 15 minutes, then 350 degrees for 30 to 45 minutes.
